This is a recipe that we have experimented with many times and perfected with our mom over the last few months:
Our "Secret" Chocolate Chip Cookie Recipe
Ingredients
2 cups of flour, chocolate chips to taste, 1 teaspoon of baking soda, 1 teaspoon of salt, 1 cup of cane sugar, 1 cup of brown sugar, 1 tablespoon of vanilla, 2 eggs, 2 sticks of butter, 1 tablespoon molasses (optional)
Tools for preparing
Sifter, Large and medium sized bowl. wooden spoon, measuring cup, teaspoon and tablespoon measuring cups.
Preparing
Before you start, leave the butter and eggs out for a few hours in the kitchen until they reach room temperature. First, put the sifter over the medium sized bowl and add flour, baking soda, & salt to the sifter. Sift the mixture till nothing remains in the sifter. Next add the butter, cane sugar, and brown sugar to a separate bowl, then mix with the wooden spoon until it resembles cookie dough. Then add eggs one at a time. Your dough should be easy to mix. Next add vanilla. I always add a little extra vanilla because I like the flavor, though it is completely up to you. Now add in the flour mixture little by little and mix it after every time. Once you have finished pouring in the flour mixture, stir in the chocolate chips, The batter is finished!!!
Baking
Preheat the oven to 375 Fahrenheit. Use a spoon and make dough into balls, put 9 - 12 onto a baking sheet, no oil or parchment paper is needed. Once the oven has finished preheating put the baking sheet in the oven with balls of dough on it. Bake for nine minutes for a chewy texture, bake for eleven minutes for a crispy texture. Once finished baking place cookies on a cooling rack. Repeat the baking process until there is no dough left. Serve!!!
This is a pretzel recipe we adapted after failing many times to actually shape the pretzels correctly. It is much easier to instead make a pretzel ball (or "bite") and it has all the same great flavor!
Pretzel Bites
Pretzel bites
1 teaspoon of rapid rise or instant yeast, half cup water, 1 & 1/2 teaspoon kosher salt, quarter cup of oil, half teaspoon baking soda, three cups of flour, & 1 teaspoon brown sugar.
Tools for preparing
Wooden bowl, medium sized bowl, baking sheet, pastry brush, wooden spoon, cup, & measuring cups.
Preparing
Pour a quarter cup water in cup and mix yeast until dissolved, let it sit for an hour & a half. Add flour, 1 teaspoon kosher salt, & yeast mixture to wooden owl. In a separate bowl, add oil and brown sugar, mix till dissolved. Add the oil mixture to the wooden bowl and hand-mix until no sticky or wet parts remain. You may add additional flour if needed. Cover the dough in plastic rap to let it rise for 45 minutes. Once the has finished rising break apart the dough and roll into separate balls. The dough is finished!!!!
Baking
Preheat the oven to 400 degrees. Place the remaining water in cup and the add baking soda. Put the cup into the microwave and heat for 1 minute. The cup will be hot so a pair of oven mitts are needed. Take the pastry brush and start to put the baking soda mixture on to the individual balls. This creates the color of the pretzels. If the oven is preheated then you may place the balls onto a baking sheet and into the oven. Bake for 11 minutes. Once you have finished baking use oven mitts to take the baking sheet out of the oven, place remaining salt onto the pretzels. Serve!!!!
